Oatmeal Pancakes

Warm, chewy, and full of cinnamon. They're like eating an oatmeal raisin cookie for breakfast.

Equipment

  • 1 Large Skillet or Griddle
  • 1 Medium Bowl

Ingredients
  

  • 2 cup All Purpose Flour
  • 1/4 cup Brown Sugar
  • 1 tbsp Baking Powder
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 2 cups Oatmeal
  • 2 cups Milk
  • 2 Eggs Large
  • 1/4 cup Oil

Instructions
 

  • Heat skillet or griddle to medium-low
  • Mix up all of the ingredients
  • Spoon 1/4 cup of batter onto skillet per pancake
  • Cooke 4 min each side

Notes

  • I've used regular oats and quick oats in this recipe and can't tell that it makes any difference. 
  • Top these with syrup, honey, or you can even simmer some frozen blueberries to make a berry topping. 
  • Once the pancakes cool, you can put them in a large Ziplock bag and store in the freezer for months for an easy breakfast. Just reheat in the microwave or toaster.
