Oatmeal Pancakes
Warm, chewy, and full of cinnamon. They're like eating an oatmeal raisin cookie for breakfast.
Equipment
- 1 Large Skillet or Griddle
- 1 Medium Bowl
Ingredients
- 2 cup All Purpose Flour
- 1/4 cup Brown Sugar
- 1 tbsp Baking Powder
- 1 tsp salt
- 1/2 tsp cinnamon
- 2 cups Oatmeal
- 2 cups Milk
- 2 Eggs Large
- 1/4 cup Oil
Instructions
- Heat skillet or griddle to medium-low
- Mix up all of the ingredients
- Spoon 1/4 cup of batter onto skillet per pancake
- Cooke 4 min each side
Notes
- I’ve used regular oats and quick oats in this recipe and can’t tell that it makes any difference.
- Top these with syrup, honey, or you can even simmer some frozen blueberries to make a berry topping.
- Once the pancakes cool, you can put them in a large Ziplock bag and store in the freezer for months for an easy breakfast. Just reheat in the microwave or toaster.
